It’s that time of year when spicy holiday tea can become a daily savored health strategy!
The classic mulling spices that induce nostalgia for holidays past are: cinnamon, clove, nutmeg, allspice, ginger, and citrus zest. These herbs are very similar to a chai spice blend which tends to also have cardamon and black pepper. Other mulling spices include star anise and a variety of fruits (apples, raisins) or fruit ferments (cider, wine, etc.)
This recipe is a spicy tea up-leveled with tonics herbs for supreme nutritive abundance so your body can remain warm, glowing, blissful and immunologically-strong throughout the fall and winter.**
Bring to a simmer for at least 10 minutes:
2 cups spring water or 1 quart spring water for a lighter tea
1 tablespoon cut and sifted organic cinnamon – True Ceylon Cinnamon is more tonic than Cassia cinnamon, but if you only have cassia just use it 🙂
1/2 teaspoon organic ginger powder or grated fresh ginger
1/2 teaspoon freshly micro-planed organic citrus zest (orange, lemon, tangerine, etc.)
or several slices of organic citrus fruit
or 1 drop organic essential oil of orange
or 1 teaspoon organic dried orange rind bits
or 1 teaspoon aged tangerine peel
2-5 organic whole dried cloves, pinched to break apart
2-5 organic dried allspice berries, pinched to break apart
1-3 pinches worth freshly micro-planed organic whole nutmeg
1-2 pinches sea salt
2-4 teaspoons tonic herb extracts, to taste

OPTIONAL: add organic apple cider (hard or fresh juice) or organic wine to make wassail *be cautious when using alcohol (flammable) on a stovetop*
Strain through a very fine metal strainer or fine cloth nut milk bag into ceramic mugs. Grin and share!
